About ten vineyards are used from the South and North sectors of the Reims Mountain, such as the vineyards of Ambonnay, Bouzy, Louvois and Tours-sur-Marne. The selected grapes are selected and seperated from the bunch before moving to the deposit, for a maceration that can last 48 to 72 hours. The minimum age is 5 years for this Champagne.
