Originating from the most famous regions of Spain such as Jabugo-Huelva, Guijuelo, Pedroches as well as Extremadura where the ecosystems provide the perfect environments for the natural produce to develop their unlistable textures and flavours.
The Iberian hams and Iberian shoulders (palettes) of acorn that we select are of the highest quality and authenticated by the official Denomination of Origin marking. They come only from Iberian pigs raised in freedom in their natural pastures. This provides them with the opportunity to freely graze feeding on the natural supply of Acorns during the ‘Montanera’ (period when acorns fall from oak trees). They will normally eat a minimum of 60Kg of acorn during this period.Once slaughtered, they are submitted to a process of salting of approximately ten days and are cured between 24 and 36 months with some special hams being matured up to 42/46 months.
